Determines the viability of developing a food hub for rural
and frontier regions. Highlights interviews conducted with
farmers to gauge their interest and capacity to support a
food hub, and with food service directors to review the
requirements of food vendors, and their participation and
interest in purchasing local foods from a regional food
hub.
